With the release of high pressure, A strong shock wave or high-speed jet is formed in the liquid. This micro-jet/shock wave produces a physical shear force on the animal and plant cell tissues, deforming/breaking/and releasing the contents, thereby promoting the dissolution of the effective ingredients in the cells .
